The Most Amazing Vegan Vanilla Berries Naked Cake

These vegan vanilla berries naked cake are refreshing! who can resist a moist cake with coconut frosting and fresh berries?


You’ll Need:

Vanilla Cake:

  • 1 1/2 cup (360 ml) oat milk
  • 2 tsp vinegar
  • 1 cup (200 g) granulated sugar
  • 1/3 cup 2 tbs (110 ml) vegetable oil
  • 1 tbs vanilla extract
  • 2 cups (250 g) flour
  • 3 tbs corn starch
  • 3/4 tsp baking soda
  • 1 tsp baking powder
  • 3/4 tsp salt

Coconut Vanilla Frosting:

  • 2 cans (2 x 400 ml) coconut cream or full fat coconut milk (chilled)
  • 1/4 cup (40 g) powdered sugar
  • 1 tsp vanilla extract
  • 2 cups fresh berries (strawberry, blueberry)


Instructions:


  1. Grease three 17cm baking pans and heat the oven to 175°C.
  2. Combine milk and vinegar in a small jar and set aside.
  3. In a larger bowl mix together the sugar, oil and vanilla extract. Add the milk and mix well.
  4. Sift together the flour, corn starch, baking soda, baking powder and salt. Gradually start adding the flour mixture to the wet ingredients while whisking.
  5. Divide into the three pans and bake for 12 - 15 minutes. Chill well or freeze.
  6. To make the coconut vanilla frosting take the coconut cream (or milk) and scoop out the fatty part. Leave the liquid for smoothies or cooking. Start whisking and slowly adding the powdered sugar and vanilla. It will take about 10 minutes to stiffen. Chill for half an hour (or more) in the fridge.
  7. To assemble place one chilled cake layer on a plate and frost with coconut frosting. Cover with a few berries cut to bitesize. Now cover with second cake layer and repeat. After third cake layer in place, frost the edges with thin layer of frosting. Frost the top layer thicker and decorate with remaining berries.
  8. Store covered in fridge for up to 3 days, though best served immediately.


NOTES:

  • Bake the cake layers one or more days ahead and freeze for easy frosting.
  • You can also bake the cake in one pan and cut it later. Or use one pan and wash between baking.
  • Use any fruits you like.
